Orange Peel Jam Ingredients: 4 oz. maple syrup 3 oranges 1 vanilla pod, shell only, sliced into small pieces salt
Method: Slice oranges in half and squeeze them into the cup. Drink 3/4 of the juice and keep the rest. Cut the orange skins into strips and place them in a cast-iron saucepan with the maple syrup and sliced vanilla pod. Add any remaining orange pulp from the juice filter and cook for 2-3 minutes, then add the remaining orange juice. Bring to a boil, lower the heat, cover, and cook for around 1 hour. Add a pinch of salt toward the end of cooking. Mix with an immersion blender to make the jam creamier.

On 19 March 1995 Massimo opened Osteria Francescana in the medieval city centre of Modena. His concept was to juxtapose culinary tradition and innovation with contemporary art and design.
In 2012, shortly after Osteria Francescana was awarded its third Michelin star, the restaurant closed for the summer for a period of refurbishment and opened with an updated insight into Massimo’s two biggest passions, contemporary art, and avant-garde cuisine.
Massimo and Osteria Francescana were featured in episode one of the first season of Netflix’s Chef’s Table series in 2015, and the second episode of the second season of Master of None. He offered them a full meal, which was subsequently shot for the episode and featured the actors’ real reactions to his food.
